El Cardenal stands out for its national cuisine. Visitors of this place with history and culinary tradition cannot miss out the seasonal dishes: in April and May, those are the agave flowers and huautzontle sandwiches; between June and July, agave worms; in August, September and October, the chinicuiles, the huitlacoche and the chiles in nogada are a must see; and from November to December, pumpkin from Castilla and a cod to close the year on a high note.
